LAUNCH A FOOD TRUCK
Food truck entrepreneurs require a curriculum focused on local mobility, rapid inventory turnover, event-based logistics, and strict municipal compliance—rather than the manufacturing, grocery distribution, and slotting-fee considerations typically associated with CPG founders.
The following curriculum is designed specifically to address the unique needs of food truck and mobile food vendors:
1. Asset Acquisition & Truck Building
- Buy vs. Lease vs. Build: Comparing the upfront costs of buying a turnkey used truck,
leasing a vehicle, or converting a step van. - Mechanical Inspection Checklist: Evaluating used trucks for engine health,
transmission durability, generator wattage, and onboard plumbing capacity. - Kitchen Build-out Blueprints: Designing a workflow blueprint that passes local health
codes on the first inspection.
2. Licensing & First-Time Permitting
- The "Permit Matrix": Mapping out the specific sequence for health department, fire
marshal, and city business license approvals. - Commissary Agreements: Securing the mandatory commercial kitchen contract
required by the city to pass your initial truck inspection. - Propane & Fire Safety Certifications: Installing mandatory automatic fire suppression
systems (Ansul systems) and passing pressure tests.
3. Operations & Logistics
- Commissary Kitchen Selection: Evaluating shared kitchen options, storage fees, gray
water dumping, and electrical hookups. - Route Optimization & Spot Scouting: Securing high-traffic street parking, tracking foot
traffic patterns, and negotiating private lot partnerships. - Vehicle Maintenance & Redundancy: Managing generator upkeep, propane safety,
winterization, and handling emergency breakdown protocols. - Equipment Layout & Ergonomics: Maximizing speed of service inside tight spaces,
hot/cold line separation, and high-volume prep.
4. Regulations & Compliance
- Mobile Food Vending Permits: Navigating city-specific health department codes, fire
safety certifications, and seasonal parking bans. - Multi-Jurisdictional Tax & Licensing: Managing business licenses and local sales
taxes when operating across different city or county lines. - Food Safety On the Move: Maintaining strict cold-chain holding and temperature
monitoring without stable shore power.
5. Inventory & Menu Engineering
- High-Throughput Menu Design: Limiting menu items to maximize service speed,
cross-utilizing ingredients, and reducing food waste. - Just-In-Time Prep & Batching: Forecasting daily ingredient needs based on weather,
local event size, and historical sales data. - Supplier Sourcing for Mobile Restocking: Balancing local restaurant supply runs with
wholesale distributor deliveries to match minimal on-board storage.
6. Marketing & Revenue Streams
- Real-Time Location Marketing: Using social media stories, geolocation tags, and apps
like StreetFoodFinder to alert followers of daily stops. - Event & Festival Booking: Evaluating vendor fees, calculating minimum guaranteed
sales, and managing high-volume event logistics. - Catering & Private Micro-Events: Structuring corporate lunches, weddings, and private
party contracts to secure predictable, high-margin revenue.
7. Tech Stack & Finance
- Mobile Point-of-Sale (POS):
- Daily Cash Flow & Weather Hedging: Managing tight operational margins and building
financial cash reserves to survive rainy days or winter slow seasons.
Master Class Take Aways:
- Master compliance and permitting.
- Design every operational system around extreme mobility, limited space, and speed.
- Diversify revenue and build resilience through real-time marketing and financial buffers.
